I have a UU team that consists of:

This team is supposed to be a bulky/stall team. Umbreon is there to heal all my other Pokemon, being both a physical and special sponge, as well as being the Pokemon that deals with Psychics, so that Crobat, Tentacruel, and Chesnaught will be safe.
Tentacruel is there to be another special sponge, as well as a toxic spikes setup. Tentacruel is also there to deal with fire, and grass types, as well as having the potential to half a Pokemon with physical attacks, although this will usually result in it being KO'd. Of coarse it's also used to prevent the other team from setting up.
Florges is there to play a similar role as Umbreon, acting as a healer, but I decided to opt out it's aromatherapy with Toxic just in case I couldn't get any poison out from the other Pokemon, as Tentacruel is difficult to save afterwards, and having 2 Pokemon with toxic was more reassuring that'd I'd always have a chance to get poison out. It's also there to rid me of those pesty dragons and fighting types (so Umbreon and Steelix will be safe).
Crobat is my response to all fighting types, and my one Pokemon that can resist Ground. It's the fastest Pokemon I have on the team, so I rely on it when none of my other Pokemon are quick enough, or have enough health to finish a target off. It's also my only way to combat Substitutes (with Infiltrator). So Roost is there to keep it around as long as possible.
Chesnaughts also useful for blocking off physical attacks and finishing them off. With Leech Seed it gives my team yet another way to recover (which makes 3: Leech Seed, held item, and wish), and Drain Punch of coarse lets it stall even longer.
Steelix is the Pokemon I built the team around, but so far it seems to be the least useful. It's there to setup stealth rocks to deal with the flying types,and rack up damage with all of the setups my team put out using roar. It's also there to wall out all physical attacks, and potentially with base 95 Sp.Def, some special.
(Sidenote: this is my 2nd competetive team I've built, the previous one having been made the year before, so I've been relying on Smogon a lot for this, only making slight changes to their builds. Hoping this is at least a decent setup for my 2nd time around).
