How do I change trainers Pokemon? E.g. Change gym types

What's going on guys!

I'm currently making my own hack ROM but i'm stumped on how to change trainers pokemon. For example, I want to change the gym types so it is more interesting but I have no idea what tool to use for this.

If anybody knows please can you help me. My hack is coming along just fine but stuck on this.
