Personally, one is enough like I've stated before. I noticed how a lot of people compare it with Pokémon Mystery Dungeon and Pokémon Ranger. However, that is a very different case. The way those games were developed in movement and location is a different style from the main meta-game, such as HeartGold and SoulSilver. For one, in PMD and PR we could travel using the stylus and didn't have to follow the strict X-Y axis rules. Not to mention, the areas situated in those games were a lot bigger in space and when it came time to traveling you could actually use the Pokémon for it. So, if the main games were developed like that, then yes I wouldn't mind having more than one Pokémon out, but how it is now, one if good enough for me. Not only because it'll be too crowded like so many say, but it'll be overdoing the feature a little bit too much.

To be honest, I don't think any Pokemon should follow you.

It annoyed me enough on Pokemon Yellow, I don't want to be playing a remake that could be really good, only to have it mess up and have a bloody Eevee or something chasing me around.

Plus, it uuh, it'd get to crowded xP.

I assume just like in yellow and with the info we have been given about the matter, that you can set any pokemon you want following you, which could include 1 or none, some people do not like followers, and Game Freak has most likely anticipated this.
 
I think it should depend on the size of the Pokemon, you can have either one huge Pokemon (such as Rayquaza or Snorlax) or have 3 small Pokemon follow you or 1 medium and 1 small Pokemon follow you. But I still love the idea of the Pokemon following you though

To be honest with you, whether it be one large Pokémon like Wailord or one small Pokémon like Pichu, it won't really make much of a different. Each Pokémon, no matter the size will be kept within one square tile. Not to mention, the smaller Pokémon are kept just about the same size as the player in their OW sprite or just a bit smaller.

For instance, if you go to Amity Square in DPPt and take any of the smaller Pokémon they allow, you will notice they look almost the same size as you or a bit smaller. So, again whether the Pokémon be naturally large or small, it'll still seem a bit too much. With this said, my opinion is that one is enough, but allow an optional feature for those who may not want their Pokémon to tag along behind them.
 
Yeah, more than one just wouldn't work. It would be far too crowded.
 
I think you should be able to have as many pokemon following you as you want. When you click on a pokemon, there could be a little option asking you if you want it to follow you or not.
