So I got that shiny beldum, but I don't like its nature. Can I just restart my game, and get a new Beldum? Or how does that work

Yes, just keep restarting til you wanted the one you're looking for. I have not tried it but did it to many other legendaries in ORAS.

Before you go on a path that takes FOREVER, just keep in mind, if you have not saved yet you don't actually need to restart your game, you can simply reset your game. essentially as long as you save right before speaking to the woman in the pokemon centre, you can reset infinitely until you get the nature you want by talking to the woman over and over again.

This is what I did to get myself an Adamant Beldum (lucky for me it ended up with 31 IV's in attack (sadly it also had another 31 IV's but in it's special attack...)).
