I want to rename v\h07 in the game. The default is Ruby but I would like the player to be able to name it whatever they want. Thanks for the help.

Well I'm not sure if there's anything on it for Ruby, but Touched managed to manipulate it a bit for FireRed: https://www.pokecommunity.com/showthread.php?t=333784.
At the very least, the principles of the hacking may be similar enough to give you an idea.
