Need help changing a sprite in FireRed

    So I'm trying to make it so that the old man at the start of FireRed is not the one to show you the tutorial. But upon changing him, it also changes the sprite of who it is that hasn't had his "coffee". So to be clear, I want the old man to be the one blocking the path at the start, but someone else that shows you how to catch Pokemon. If it's script editing I need to do, please tell me what to change.
