My EEVEE has adaptability
Adaptability: Powers up moves of the same type
Just making sure that it means normal type moves it uses are powered up?

Yes, Adaptability makes the STAB modifier 2x instead of 1.5x. Still, it doesn't pass on to its evolutions unfortunately.
