4th Gen Pokemon EV's and IV's

Back when diamond and pearl first came out I was really into the game and found out about ev's and iv's. I eventually did some training with ev's but stopped in the middle since I got bored with the game. Now I have no idea where I left off, I know the ev's aren't maxed (I talked to the lady in the market) so is there any way for me to check? I also forget how to level Pokemon in ev's and iv's. I remember giving them vitamins but I can't remember how much I'm supposed to give them and if I can only max out two stats or three. So any help would be appreciated ^^

is there any way for me to check?
Use EV-reducing berries, they reduce your EVs by ten at a time
I also forget how to level Pokemon in ev's and iv's.
EVs; Defeat certain pokemon
IVs; Preset values that cannot be changed
I remember giving them vitamins but I can't remember how much I'm supposed to give them and if I can only max out two stats or three.
You can only max out two stats at the most. You can give a pokemon up to 10 vitamins in each stat (Or until the EVs in that stat hit 100)

Sparkz linked to an useful guide but aside from that you can't calculate EVs if you don't know the exact IVs and vice versa. This isn't really needed and should have been posted in Strategies & Movesets.
