Mine is Lapras and Scyther. A pokemon that can evolve only 1 time or can't evolve usually has a pre-evolved form.

Scyther evolves, I think Rayquaza, Groudon, Kyogre, Snorlax, Latias, Latios, Mew and Mewtwo should have prevos ^ ^

lol, i could imagine how Ridiculously cute a baby pichu would look, though it will never happen because they always keep that strict 3-forms evolution chain.
