I've just arrived in Celadon City, with an Ivysaur, Pidgeotto, Dugtrio, and a Pikachu. I bought a Thunderstone and a Water Stone, and I now have a Vaporeon and a Raichu. Then I found out that Erika is a grass type Pokemon Leader, so is it worth it going back to catch and train a Vulpix, or take my chanes?

Also, my Vaporeon knows Hyper Beam...

Flying type pwns Grass type. Hopefully your Pidgeotto knows Wing Attack :)

Failing that, I believe you can get the Ice Beam TM from the rooftop of the Dept. Store, but that was in the originals, I never tried to get it in LG because I had Charizard =/

Anyway, If you can get the TM, I think that Vaporeon can learn it.

Ice Beam is about 4,000 coins in the Game Corner now.

Pidgeotto should be plenty good as long as it's at a high enough level. If not, it might be a good idea to go ahead and train a Vulpix. Another option could be an Kadabra, since two out of the three Pokemon Erika has are Poison type also, and there's a Poison type Gym coming up.

Just use Pidgeotto. I think you forgot that Flying-types are super effective, not just Fire.

I totally forgot about that, I've been using my Pidgeotto to annilihate the bugs, and I've still got the Rocket Game Corner to level him up, which is helpful. He knows Gust, Wing Attack, Aerial Ace and Quick Attack, so hopefully that's enough.

Then your in shape, just keep at it with wing attack, and if yours is getting closer to 36, enjoy a nice Pidgeot. :)
