also lets say i put my pokemon in from pearl, and then i erase my pearl, would i still be able to get them out?

You get one file for the game, they can only go back a forth between the save file they came from and can't be put onto any other save files on any cart.

If you upload pokemon to the ranch, then erase the save file on that gamecard, those pokemon are stranded in the ranch. Read the warning they give you every time you deposit and withdraw carefully, they tell you this.
