Think about this. The main feature that set Yellow off from other Generation I games was the Pikachu following you. This is already in HG/SS, but much more flexible, as you can make any Pokemon follow you on a whim. A Yellow remake would be a step backwards, since you would be bound to Pikachu rather than any Pokemon you want.
The other changes include a single bugfix, the inclusion of pathetic battles with Jesse & James, and changing of certain trainer's teams to be more like the anime (resulting in laughable teams like Lt. Surge's lone Raichu). Remakes of third versions are simply not reasonable since the paired remakes of games take important features from the third versions.
Really, there's no need for any more remakes. RSE's graphics are absolutely beautiful as they are, and the only substantial battling overhaul since Generation III was the Physical/Special split. Gamefreak should spend their focus on weaning off the 8-Gym + Evil Team + League + Rival formula that has consumed the Pokemon franchise.
