And I'm asking just for sure but does Greninja always have STAB thanks to Protean?

Yes. And here's a better Spiking Greninja set, as eating away part of your HP for scouting with U-turn isn't worth it:
-Spikes
-Hydro Pump
-Ice Beam
-Extrasensory
Nature: Timid
EVs: 252 SAtk/4 SDef/252 Spe
Item: Life Orb/Focus Sash
Ability: Protean
