Espeon because it's more calm, has better stats, & better appearence.
 
Well of all the eevelutions I only like Umbreon and Vaporeon, so yeah Umbreon is my choice. Oh and by the way, gamewise I would choose Umbreon by faaaar. Umbreon is a team player and can play that role very well with wish and yawn/toxic plus its high defences. Espeon might have really good offensive stats but it is overclassed by other special attackers (Alakazam I'm looking at you), and not to mention it is very frail.
 
I would sayUmbreon I like dark types better.
