Let's take a look.
Hitmonlee @ Life Orb
Jolly Nature • 252 Atk / 4 SpD / 252 Spe
○ Close Combat
○ Stone Edge/Bulk Up
○ Earthquake
○ Blaze Kick
Close Combat gets STAB and Fighting's excellent coverage. I'm leaning towards Bulk Up because of Stone Edge's repetitive coverage with the other three attacks. The only real reason to use Stone Edge would be for Altaria which isn't even popular in UU anyway. EQ has good coverage with many Pokemon in the UU, and the main purpose of adding it is to deal with Electric types. Hitmonlee's Attack and Special Defense make it a solid choice for a lead, but I'm still a bit iffy about the Speed, but many of the fighters in UU have a mediocre speed that Hitmonlee wouldn't have trouble dealing with anyway. I think that my team is prepared for the likes of Nidoking and Toxicroak if they switch in, so I'm not worried about most of Lee's counters.
Nidoqueen @ Leftovers
Impish Nature • 252 HP / 96 Atk / 160 Def

○ Crunch
○ Taunt
Nidoqueen's not-so-perfect stats couldn't matter any less here. This moveset is pretty self-explanatory. Nidoqueen survives most of UU's EQs, so countering one, particularly from the likes of Heracross or Hitmonlee, will leave the opponent speechless. Counter can also send a Zen Headbutt back at Xatu. Taunt is only for the Sweepers that like to set up before they attack. Crunch and EQ are a nice little bonus for those who take 4x damage to EQ or the weak Ghost types and Psychic types. Nidoqueen's Poison Point is also helpful when the opponent uses a contact move.

Timid Nature • 4 HP / 252 SpA / 252 Spe

○ Calm Mind
○ Ice Beam
Standard Luna. Not much explanation is need, is it? After a Lovely Kiss, Substitute, and Calm Mind, Jynx will give just about anything in UU trouble, even things that resist Ice Beam. Since pretty much everything will be asleep by the time Jynx begins attacking, not even super effective attacks can stop this thing without the risk of fainting. The most common insomniac is Noctowl, and you'd have to be crazy to switch one of those in onto a Jynx.
Mantine @ Leftovers
Calm Nature • 252 HP / 252 SpD / 6 Spe
○ Surf
○ HP Flying/Ice Beam
○ Mirror Coat
○ Toxic
Surf, HP Flying, and Ice Beam are all for a little extra coverage as Toxic drains the opponent's health. Mirror Coat can force a Thunderbolt or Discharge back on the opponent, assuming Mantine's godly Special Defense can take the attack. Ice Beam for Altaria, Dodrio and friends, and HP Flying for the grassy fighters of the UU.
Manectric @ Life Orb
Timid Nature • 36 HP / 252 SpA / 220 Spe
○ Thunderbolt
○ Flamethrower
○ HP Grass
○ Substitute
With a Substitute set up, Manectric has the temporary power to rip through a team. This moveset gets good coverage. Thunderbolt scares anything out of the water and zaps birds out of the sky. Flamethrower turns bugs and grass into ashes and melts popsicles like Glaceon and Froslass. HP Grass is for Quagsire, Gastrodon, and Rock and Ground types.
Shuckle @ Leftovers
Impish Nature • 252 HP / 96 Def / 160 SpD
○ Knock Off
○ Toxic
○ Rest
○ Encore
Knock Off and Encore can really mess up Physical Sweepers, especially those that rely on items. Toxic will drain their HP while they repeat the same move over and over. Rest is a must. The max HP will help Shuckle take advantage of its outrageous Defense stats. I've also considered an end-match Shuckle with Rock Slide • Earthquake • Acupressure • Rest, but this seems more appropriate for my team. While this Shuckle moveset has quite a few counters, none of them can quickly KO Shuckle, nor can they stay in battle without getting Status'd or loosing an item.
I know it's odd to invest this much Defense into a UU team, but I thought I'd take a different approach this time.
