    Am I correct IN assuming that if i wanted to train a pokemon for 80 EVs in attack, that giving it 8 proteins would be giving it those 80 EVs?
     
    Yeah, but if you want to max EV train in attack, you could also give a pokemon 10 proteins for 100 EVs then add an additional 152 EVs from training, also from using macho brace, pokerus, etc to help.
     
    To be honest, I never knew that. EV training'll be a lot easier now.
