I know in games prior these increase chances for encountering pokemon of the specific type, but I'm wondering how it works in this game (I didn't play LGPE either). Do they increase the chance of the specific type popping up in the overworld? Or simply encountering them in the random "!" encounters?

A lot of breeding tends to be competitively focused, yes, but there are definitely other reasons to want to breed. In SwSh specifically, you tend to catch a lot of evolved Pokemon in the Wild Area, so getting the base forms to complete your Pokedex is often achieved fastest by breeding...

I somehow managed to remain spoiler-free when it came to the starter evos. I knew I was gonna pick Grookey since the first trailer though, and I wasn't disappointed!
Honestly all the second stage 'mons are so cool, when Grookey first evolved I was freaking out haha
