Ah yeah you can fix that by depositing the edited mons in the PC and withdrawing them again, that'll make the game recalculate their stats.

Hey, thanks! Unfortunately you'll have to use a save editor (pkhex) to do that. The 3DS hacking scene isn't nearly as advanced as the GBA is, so there's no easy way to do that in game yet (EVs can be reset the same way as vanilla Y, but that's a very grindy system).
