Well, all genres of anime have those must-watch series that are considered the best of the best for that genre. What anime do you consider a classic? [If you want, by genre]

I'll always consider Yu yu Hakusho and Cowboy Bebop to be classics.

I guess Dragonball would be the main classic for Shounen. Card Captor Sakura and Bishoujo Senshi Sailor Moon can be considered classics for Shoujo. Pokemon Indigo Plateau would be considered a classic I think. My Neighbour Totoro and Spirited Away are must sees for anime movies.

Ok, here are my "Must watch", i'll admit they aren't all "classics" in the usual sense but they are all really good.

Romance - Clannad / Clannad - After Story, Koi Kaze, 5 Centimeters per Second
Psychological - Elfen Lied, Death Note, Ima, Soko ni Iru Boku
Mecha - Tengen Toppa Gurren Lagann
Comedy - Sayonara Zetsubou Sensei, Natsu no Arashi!
Action - Gantz / Gantz - Second Stage,
Mystery - Bakemonogatari, Mnemosyne: Mnemosyne no Musume-tachi
Tragedy - Kimi ga Nozomu Eien, Tokyo Magnitude 8.0,
    Children's - Cardcaptor Sakura, Pokemon

    Seriously, guys?

No love for Sakura Taisen, one of the largest series in Japan?

Yes, it has an anime adaptation, so it counts...

Sakura Taisen is still almost a cult thing in the States, but in Japan...

Nope. Just nope. Read the manga. You don't need to waste your time with the anime. I'd rather read one of the greatest manga of the decade than watch it's messed up anime counterpart.

It's on my probably starting very soon list now i'm up to date on R+V, Cage Of Eden and a couple of others. Is the anime that bad in comparison? I thought it was pretty good for the most part, the ending was the only bit i really didn't like.

That last mission with Kurono, the train, girl on his back and the whole 'bang' situation never happened in the manga. They messed up the face of the girl who Kurono had sex with, she's suppose to look like Laura Croft/Tomb Raider. Everybody died except Kurono on that Buddha mission and Kurono has been doing a few missions on his own and started to actually develop as a character. The whole manga started to pick up after the whole Buddha thing. The only form of animated Gantz that should require watching is it's abridged series, and even then there are some inside jokes that only the manga readers would get. lol

For me, I'd consider YuYu Hakusho, Dragonball, Cardcaptor Sakura, Sailor Moon, Pokemon, InuYasha and Samurai X/Rurouni Kenshin as classics.

It's Decided then Gantz will be the next long runner i pick up. Even in the anime i thought that Sei Sakuraoka was like Lara Croft. I hated how she got killed by a sneak attack.

Cardcaptor Sakura, Sailor Moon, Marmalade Boy, and Clannad/After Story are the shows that I would pick to be classics in the genres that I typically watch (shoujo and romance for the most part).

As for me, i consider Cowboy Bebop, Dot/Hack, Sailor Moon, Gundam, Rurouni Kenshin (Samurai X), Vampire Hunter D., Orphen, Inuyasha, Dragon Ball, Gokudo Swordsman Extrordinare, and YuYu Hakusho to be classics.

Well, when it comes down to it, every category has a different kind of 'classic'.

Action/Adventure: Cowboy Bebop, Samuari Champloo, etc.
Mecha: Evangelion, FLCL, Gurren Lagann, GaoGaiGar any Gundam that a certain person prefers.
    Shojo: Sailor Moon, CardCaptors, etc.
Harem: Specific Tenchi Muyo series for preference, Love Hina, Ranma 1/2
Shonen: Dragon Ball Z, Gurren Lagann (Yes GL again.), FullMetal
    Film: Anything by Miyazaki.

Mecha: VOTOMs (for being one of the few, if not the only, true "real robot" shows), G-Gundam (for breaking out of the UC mold and showing different things can be done), Gatchaman (probably one of the first anime where a main character was actually killed off)
Shojo: Card Captor Sakura, Sailor Moon
Harem: Tenchi Muyo's first OVA series
Shonen: Just about anything from the 90s, but if pressed I would say Dragonball
Space: Space Battleship Yamato, Cowboy Bebop, Planetes
Comedy: Ranma 1/2, Kochikame, Kinikkuman OG

    Clannad/Clannad ~AS~
    Pokemon (1st and second season)
    Elfen Lied
    Death Note
    Full Metal Alchemist
    Yu-gi-oh

And thats about all I can think of right now.

I'll agree on saying that Yu Yu Hakusho is a classic. I can remember myself imitating Yusuke's spirit gun technique. However, Hiei is my favorite character of the whole series.

Cowboy Bebop is just plain amazing, even though it didn't have many episodes. That show is my 2nd favorite anime series of all time. I love the opening of the show and their music is so jazzy.

There is also Death Note and Elfen Lied. Both series are very gory and there are a few parts in each anime that was just disturbing to me. However, I really enjoy it and didn't regret watching all of its greatness. The ending for both the anime and manga of Elfen Lied was kinda disappointing, however.

I would say Dragon Ball, Dragon Ball Z, Yu-Gi-Oh and Naruto are classic anime.

    Movie:
~ My Neighbor Totoro (could be My Friend Totoro; anime movie with Holly's bigger grey plush, from Toy Story 3)

    #1: Samurai Pizza Cats
    #2: Trigun
#3: Dragon Ball, Dragon Ball Z, Dragon Ball GT
    #4: DeathNote
    #5: Naruto & Naruto Shippudin
    #6: BLEACH
    #7: Chobits
    #8: Medabots
    #9: Monster Rancher
    #10: Digimon
    #11: Yugi Moto Yu-gi-oh
    #12: Astroboy
    #13: Utawarerumono
