Super Mario Galaxy!

Best music I've ever heard in a video game.
 
I really like the music from F-Zero GX. You can pick any song from that game and it'll be awesome. It fits the game so well and really gets you in the high-paced, F-zero-esque mood.

Banjo-Kazooie definitely was catchy, I agree with that

Some Bomberman 64 music was good too

A lot of the Mario Kart DS music was brilliant, as is the MapleStory music.

Phoenix Wright: Ace Attorney has to take the cake with it's Pursuit: Cornered! theme, however. It's just...the best. Trials and Tribulations' is even better.
 
Jet Set Radio Future has the BEST soundtrack ever.
 
It's fun that I found out this thread while listening to Dr. Cossack's Fortress.

There are a million songs I love out there, but, to sum it up, the Mario RPG's, the Ace Attorney series and the Megaman series are specially awesome. Add anything by Yoko Shimomura or Koji Kondo. Plus a thousand more games that would take me hours to list.
 
Geez, I can't just pick one song or even one soundtrack. That's impossible.

- Anything from The Legend of Zelda. I even bought the soundtrack for Wind Waker. Koji Kondo is just amazing in general.
- The Gusty Garden Galaxy music from Super Mario Galaxy. Such a beautiful piece and so epic.
- Tunes from the Ace Attorney series. Love them.
- For whatever reason, I'm fond of the Brawl version of Gourmet Race. It's been stuck in my head for a while.
- These retro-inspired tunes from this freeware game called Cave Story. Very catchy.
- These really atmospheric tunes from another freeware game called Knytt Stories.

And I could list music frm games for ages. Honorable mentions include music from the Shadow of the Colossus, Bloody Tears from Castlevania, and... I should stop.
 
I have to say, I'm staying with the Ocarina of Time and Majora's Mask OSTs which I happen to own. For Nintendo 64 games, both of them had beautiful music <3

I like the music from Wind Waker, too. And from Link's Awakening and I guess any other LoZ GBC game (ah, nostalgia XD).

Also, the music from the Dept. Heaven series never fails to be beautiful. And the Touhou music can't be forgotten, either, especially when you consider that only one guy composes all of it.
 
My favourite game music ever has GOT to be One Winged Angle from FFVII, it is just plain, unadulterated awesomesauce.
Behind that it's Pokémon GSC (Champion/Red battle to be precise) and pretty much all of the LoZ series.
