My favourite is pretty obvious (but if you can't tell, its Espeon ;))
I had a level 50 (probably higher, though) one in Pokemon Crystal and it really helped me.
 
I've always loved Espeon and has been my fav eeveelotion since Silver....But then Glaceon stole its title after so many years...But I vote Espeon because I love SP.sweepers and Psychic types.
