  • Vaporeon is best off with a bulky spread, since its movepool tends to lean towards the supporting end of things. The EV spread should be 248 HP/252 Def/8 SDef with a Bold nature.

Espeon's preferred ability is Magic Bounce as of Gen V. It can either support the team with Dual Screens or Baton Pass Calm Mind boosts, but it can take an offensive set if it wants:
    -Reflect
    -Light Screen
    -Psychic/Psyshock
    -Hidden Power (Fire)/Baton Pass
    Nature: Timid
    EVs: 252 HP/4 Def/252 Spe
    Item: Light Clay
    Ability: Magic Bounce

    or
    -Calm Mind
    -Stored Power
    -Hidden Power (Fighting)
    -Baton Pass
    Nature: Timid
    EVs: 252 HP/4 SAtk/252 Spe
    Item: Leftovers
    Ability: Magic Bounce

    or
    -Calm Mind/Trick
    -Psychic/Psyshock
    -Shadow Ball/Signal Beam
    -Hidden Power (Fighting)
    Nature: Timid
    EVs: 4 HP/252 SAtk/252 Spe
    Item: Life Orb/Choice Specs
    Ability: Magic Bounce

Umbreon is better off with a bulky spread to make the most out of its good defenses. While it can use Curse effectively, the many Fighting Pokemon out there make setting up difficult:
    -Wish
    -Payback/Foul Play
    -Heal Bell/Toxic
    -Protect
    Nature: Careful
    EVs: 252 HP/4 Def/252 SDef
    Item: Leftovers

You're wasting Jolteon's incredible Speed and offensive capabilities here. It can't take a hit at all, even with investment:
    -Thunderbolt
    -Volt Switch
    -Hidden Power (Fire/Ice)
    -Signal Beam/Shadow Ball
    Nature: Timid
    EVs: 252 SAtk/4 SDef/252 Spe
    Item: Life Orb/Choice Specs
    Ability: Volt Absorb

Flareon is the worst Eeveelution out of the seven, period. Its offensive movepool is very shallow and its low Speed doesn't help in that case. Despite its Stealth Rock weakness, Flareon can also pull off a support set, thanks to its high Special Defense:
    -Wish
    -Protect
    -Flamethrower/Lava Plume
    -Toxic/Roar/Heal Bell
    Nature: Calm
    EVs: 252 HP/4 Def/252 SDef
    Item: Leftovers
    Ability: Flash Fire

Leafeon is better off using Return over X-Scissor; even though Return hits other Grass Pokemon for less damage, but some, especially Amoonguss, take neutral damage from it due to their Poison typing, therefore inflicting less damage than Return would:
    -Swords Dance
    -Leaf Blade
    -Return/Double-Edge/Substitute
    -Baton Pass/Heal Bell
    Nature: Jolly
    EVs: 160 HP/124 Atk/224 Spe or 80 HP/252 Atk/176 Spe
    Item: Leftovers

    or
    -Wish
    -Protect
    -Leaf Blade
    -Yawn/Heal Bell
    Nature: Impish
    EVs: 252 HP/252 Def/4 SDef
    Item: Leftovers
    Ability: Leaf Guard

    or
    -Wish/Heal Bell
    -Protect/Synthesis
    -Roar
    -Leaf Blade
    Nature: Impish
    EVs: 252 HP/252 Def/4 SDef
    Item: Leftovers
    Ability: Leaf Guard

  • Vaporeon takes most special attacks with ease. If you really want a Wall Vaporeon, you can use this.

    Vaporeon @ Leftovers
    Nature: Bold
    Ability: Water Absorb
    180 HP 252 Def 76 SpDef
    -Scald
    -Roar/Toxic
    -Wish
    -Protect

or if you want huge Wish heals, you can use 248 HP / 252 Def / 8 SpDef

It all depends whether you want to wall or heal.
