My favorite is Espeon :) I can't really explain why; it's just adorable, plus it has a strong set of learned moves. My least favorite is Jolteon, but I still like it too, just because it's an Eveelution
 
My favorite is jolteon because I used it as an effective baton passer or facade user in an UU tournament a while back to greta success.

I like Umbreon. he is cool and reminds me of the moon, sadness and that even in the darkest hour, shine.
 
Personally my favorite of all times has been JolteonI dont think there has been on pokemon game I completed that i didnt train up and use a jolteon. I must say though leafton did impress the crap out of me when i used her the first time in my diamond, ev trained with leaf blade and couple of other buffs and she become unstopable. I think that all the eevee's are outstanding in themselves but theses are the ones that i used on a daily basis.
 
My favorites are Espeon and Glaceon. Because they look sweet and are pretty powerful. Also, Glaceon has awesome physical bulk. So.. here's my opinion on all of them:

Eevee: lol
Flareon: Poor thing, what were Nintendo thinking when they gave this thing a huge attack stat and some of the crappiest physical options ever? I mean, Fire Fang and Bite? LOLWUT.
Jolteon: Meh, good at some sweeping I guess. But bring in a Dugtrio once it's locked into TBolt (assuming it's Specs of course) and it's pretty much useless :P
Vaporeon: Is kinda good I guess. Does what it's supposed to do.
Espeon: Is quite a good special sweeper in UU.
Umbreon: Good at Mean Lookpassing, Wishpassing and Cursepassing. I still don't like this thing though.
Leafeon: Ugh. I don't like this thing. I just can't stand it.
Glaceon: Another good special sweeper. Especially if you Baton Pass it some speed. :D

So yeah, that's my opinion on the Eeveelutions.
 
I like all of them except for Glaceon and Leafeon.
 
Well, my favorite is Espeon, followed by Umbreon. I like their colors and types. I have an Umbreon with Dark Pulse, decent Special Attack, and great Special Defense. Haven't trained my Espeon much, but he has good Special Attack and Speed.

The other looks weird, but I like Eevolutions in general.
 
Obviously,Umbreon,followed by Leafeon,who is followed by Jolteon.
 
Jolteon, it's one of the best competitively, is speedy, has an astonishing Sp.Attack, is an electric type, has a good offensive and supporting movepool, what do you want more than that?
 
Vaporeon

My list:

Vaporeon-no brainer, but if you want a reason, he looks like an alien.

Leafeon-grass is my second favorite type, after water, I like how he attacks better off the attack stat, can be placed nicely into a team with Vaporeon who is a special attacker.

Glaceon-Like the design, and learns water pulse.
Umbreon-Design is just too cool to comment on, at a loss for words.
Espeon-Not very found of psychic types, but he beats out Flareon, because the firefox got the short end of the stick, because of his shallow move pool.

Flareon-Fire fang is what gamefreak gave him, and when life gives you lemons...
Jolteon-He doesn't have a dominant tail, and it just makes his design look awkward, and I already chose Raichu as my fav.
 
I like Espeon and Flareon most though Umbreon is pretty cool as well, and as for ones I don't like I'd have to say those new ones are kinda silly to me really and other new ones would have to be interesting as well but not stupid, I mean a dragon one would be cool but how would you explain it same with things like a rock, ground or steel ones so it'd hake some sense though if they did it right a poisin one could be interesting.
 
I would like to see a steel eveelution. Mercureon(the element mercury, a defensive pokemon with acid armor perhaps) or Ferreon (because steel is a ferrous metal, according to wikipedia means it contains a certain amount of iron.) His eyes could glow a pale cobalt blue color.
 
I'd love to see them complete one of all types to be honest, I really would. My favourite at the moment would have to be Espeon, I love the design/look of Espeon and I am a Psychic fan. Leafeon and Glaceon and pretty good, same with Umbreon. Least favourite - Flareon, it's just doesn't look the part.
 
My favorite design wise is a tie between Umbreon and Jolteon. in the color days, I always used a Jolteon, in gold silver, I was all over Umbreon(Got it the first time by accident). Now, I use both pretty evenly. Glaceon is my favorite out of the new forms, she is just beautiful.
