Cardcaptor Sakura ED 2, Honey (unbearably adorable)
Eden of the East ED, Futuristic Imagination (actually not big on the song but it went well with the excellent video)

Outlaw Star OP, Through the Night (very characteristic of the series)

Also, the OPs for the Umineko no Naku Koro ni visual novel are excellent (especially the first one), but that's technically not anime (though there is a (bad) adaptation).
