How isn't Mudbray being hyped for?

Plenty of Pokémon become something based on a different animal when they evolve.

Carvanha = Piranha -> Sharpedo = Shark
Wingull = Gull -> Pelipper = Pelican
Remoraid = Fish -> Octillery = Octopus
Oshawott/Dewott = Otter -> Samurott = Sea Lion
Pidove = Pigeon/Dove -> Tranquill/Unfezant = Pheasant
Magikarp = Carp/Generic Fish -> Gyarados = Giant Force of Nature F***ing Dragon Serpent

Off the top of my head.

As someone who loves how Remoraid evolves into Octillery, I actually don't have an issue with a donkey evolving into a horse under normal circumstances. But it does ruin the chance of them doing some fun, unique stuff with a mule offspring, which is what I don't like.

I've been riding, caring and owning for horses for 15 years now, and I'm not huge on Mudsbray and Mudsdale, in fact, I'm a bit disappointed with them.

I would have much preferred that Mudsbray would have been a foal Pokemon, rather than a donkey. It doesn't make much sense that a Donkey would evolve into a Clydesdale...but that's just being nitpicky I guess.

Also, I've worked with Clydesdales. There's a world-class Clydesdale farm in my town that I frequent. So, being close to Clydesdales and then seeing Mudsdale...he just didn't live up to my own personal expectations. Also, I don't like his color scheme (I'd sub the rust-red for white) or the braids off his mane. It doesn't make much sense to me that he's got braids AND a roached mane (mohawk), but that's strictly personal opinion.

I'll probably still have a Mudsdale on my team at some point, strictly because it is a horse Pokemon, but that doesn't mean I love the design.
