I rarely hold any gyms for more than 30 minutes. Too many people playing and taking down a gym is a laughably easy process. After I saw my CP2000 Vaporeon take out three CP1600+ Pokémon (A Nidoqueen, Vaporeon and Dragonite) in a gym without fainting, I knew there was a severe balance issue in this game.
Most I've ever held at once was five, and that was a couple weeks ago. I wasn't even able to cash in all of them because I got greedy and tried for more gyms. Before I got to the next one, a couple gyms I held were overrun already. Nowadays if I get two or three, I cash in the rewards.

I've taken down level 6+ gyms on my own before. You don't even need to defeat all the Pokémon in the gym for the gym to lose prestige points. And that's pretty much where the issue is.I think once there are more 6 and above level gyms things will balance out since the attacker only gets six pokemon. It's the 1st, 2nd and 3rd level gyms that are pretty easy to wear down since you get lots more tries.
