Does anyone know how the QR codes work in ultra sun/ultra moon?

Other than species data, and possible Hamming codes, what other data is in there? What tools can I use to find out?

I'm not sure if you'll find somebody here who knows about stuff like that. I think it's probably a good idea to look for places where people actually datamined the games at the time. At least that seems like your best bet.
