Carbuncle. Look it up XD It ISN'T the swelling thing if you get two definitions. For those who have seen Yu-Gi-Oh GX, one character has a card deemed "Ruby Carbuncle", and you'll see it has MANY similarities to Espeon.

Jolteon es horible! It's the fugliest of the Eevee evos. (even though it's not exactly ugly) and it's too overrated X_X
Jolteon can't even learn decent moves besides Electric or Ground moves. And Vaporeon mostly learns Ice moves through TMs, with the exception of Aurora Beam.
Plus, shiny Jolteon is an ugly shade of green. Shiny Vaporeon is like shiny Swampert, a beautiful shade of purple.

Wiki's explanation - Carbuncle was the name given by the Spanish Conquistadors to a mysterious creature around the 16th Century.
There are few descriptions of what the creature looks like, although it is small with a kind of shining mirror or jewel on its head. The legend of the jewel grew up around the Carbuncle creature and many men have supposedly searched for it, hoping to find the precious stone, without success.
Well, the Final Fantasy Carbuncles are usually green. But they somewhat look like Espeon in terms of their cat-like form, and they still have the red jewel ^^
