Fire: Cyndaquil, Growlithe, Torchic, Charmander, Chimchar
Water: Carvanha or Squirtle
Grass: None, don't like grass Pokemon
Otherwise I'd choose a fighting Pokemon most likely. And since fighting and fire are my two favorite types well... Torchic or Chimchar. But also Riolu, Tyrogue, Machop, list goes on.

Fire: Oh, my. Too many to choose from! I like too many Fire-types... Charmander, Cyndaquil, Vulpix, Growlithe, Houndour, and Chimchar's really grown on me in Platinum
Water: Definitely Totodile. Magikarp wouldn't be too good to start with ^.^;;
Grass: Treecko for sure. I don't use too many Grass-types, but Sceptile PWNS
