Adamant Rhyperior with Best Attack IVs and given full Attack EVs hits Toxicitry (4X weak to a STAB Max Quake) and it doesn't do much at all. Like less than a quarter of health. What the heck? I enjoy the Max Raid battles a lot but I still don't understand how they work haha

so before you go into any max raid battle, you normally see a silhouette of a particular pokemon along with a number of stars above that silhouette. the number of stars indicate, roughly, how strong the pokemon is.

★ to ★★★ = not difficult at all. three star pokemon might have one shield that you'd have to break, but otherwise they're pretty easy.
★★★★ to ★★★★★ = fairly strong pokemon. five-star pokemon especially have two shields that you'd have to break and the first shield is activated around when you deplete a quarter of the pokemon's health (some even sooner than that).

the general goal when it comes to max raid battles is, within a set number of turns (i forget since i haven't played swsh in a while, i believe it is around 8 or so?), in order to defeat the max raid pokemon, you have to break the shields and reduce their health to 0. each normal attack that you do breaks 1 shield, and each dynamax move breaks 2, so it's more or less using your judgment wisely as far as when to conserve using dynamax moves vs actually using them.

    hope this explanation helps ^^

So 1 shotting a 5 star is pretty much out of the question no matter what Pokemon you use against it?

You can't OHKO them yeah, the game usually forces you to break all the barriers and will always stop the Pokémon's HP from decreasing once it gets to the number that triggers the barrier.
