This can't be real. I recently became the League Champion and was planning on starting my quest for the Living Dex, but I just realized that there are only eight boxes! Do I unlock more boxes somehow? Can I seriously only own 240 Pokemon max? This is ridiculous!
In X/Y and OR/AS you had to completely fill up the first eight boxes for the rest of them to unlock. I'm guessing it's the same thing for Sun and Moon, so you should get more once you fill up what you have.

I did recently get up to the sixteenth box, but one pokemon per box to unlock more? I have a bunch of pokemon in every box. I dont get why it cant just give you all 32 boxes right from the beginning. It's not like getting more boxes is hard or anything.

Not sure why. Maybe because too many boxes may be overwhelming for a casual player? I mean they're not really gonna be expecting the majority of the playerbase to fill up even 16 boxes.
But in the later gens, it was to prevent you from overfilling your boxes. As the legendary had to be caught, someone might try to fill up every space, such that the legendary would have nowhere to go. This was prevented by having the last few boxes inaccessible even before the elite four.
I feel that this question is asked every time we get a new Pokemon game... XD
The PC box system starts you off with 8 then whenever you put at least one pokemon in those each of the boxes it would unlock more, until you get a max of 32. each box has a 30 pokemon slots... which means you can have a total of 960 Pokemon in your PC. that's more than enough for each Pokemon in the Pokedex.
