1. A Fighting/Fairy-type Minotaur
I have been commenting about this awesome idea for years since a fake leak back in the days of X & Y. I would love this Pokémon to be a fresh new Pseudo-Legendary worth using, as I felt Dragons were getting weaker after Hydreigon.
I would imagine the Minotaur essentially being a cross between Machamp and Tauros, has a similar stat distribution to Salamence for terrific offensive prowess, have Abilities like Intimidate, Iron Fist or Sheer Force, and a variety of moves some abstract Kaijumons like Nidoking or Tyranitar are known for.
2. A Steel-type variant or form of Rhyperior.
Rhydon is the first Pokémon ever created by Game Freak and I was eager to see what they could with Rhyperior for each new feature such as Mega Evolution, Alolan/Galarian Form or even a Gigantamax, but it never got such treatment.
Either mechanic is a perfect opportunity to improve it's design, as well as it's viability to some extent. I'd prefer a Mega Evolution, but a Regional Variant is doable if it gets a Steel-type with the Filter Ability. Filter will give it some effective bulk. I'd even give this Pokémon and Rhydon Slack Off, just so that they can see some good use again.
3. A majestic evolution of Dunsparce.
Dunsparce is a Pokémon that we all want to receive an evolution.
I would imagine it becoming a majestic dragon or fairy serpent that can survive some hits, set up some speed control and heal with Roost thanks to it's great HP and respectable defenses. It could have a beard, feathered wings, thin clawed arms, a drill-like horn and a mighty jaw. It would be a more confident, intelligent and mighty Pokémon overall.
