Gonna write out the latest team I used to beat Born, all 3 evil teams, and Shadow Six the second time around (in Set mode) in update 9.0.3:
Role: Saint
Half my strategy was to use the custom move Holy Water, a 70 BP physical water move that doubles in power if it hits a mon with a status, then heals that status. So it's like a more flexible Smelling Salt. Small note, deff needed to PP Up all my moves since fights can get long so technically the team is expensive
Toxapex
Ability: Regenerator
Careful

Moves: Toxic Spikes, Recover, Roost, Lunge
Sets toxic spikes to enable Holy Water. Double heals felt very trollish to use lol, Lunge was okay
Wailord
Ability: Drizzle
Adamant

Moves: Holy Water, EQ, Avalanche, Rock Tomb
Rain boosts Holy Water. Was my secondary Dynamax mon, with max HP and full Dynamax levels you can get over 1000 HP which was funny
Barraskewda
Ability: Swift Swim

Moves: Holy Water, Flip Turn, Aqua Jet, Close Combat
Not as silly as "press A and win every matchup" as you may think, often I would have to reset Toxic Spikes or set up late game sweeps, but I still feel like this is one of the best options possible

Ability: Lightningrod, Mega: Intimidate

Moves: T-Wave, Light Screen, Volt Switch, Thunder
Since I had legit 4 Electric weaknesses felt the need for a hard check, T-Wave being a way for another status also seemed 100% necessary. Light Screen + Intimidate felt like I could slow down any matchup on paper. Volt Switch + Intimidate seemed abusable and a rain team with Thunder seemed good as well
I used the word "seemed" there a lot because this was easily my least used mon lol, you can outspeed plenty Electric types with my other mons and this wasn't set up to actually beat any Electric types on its own. Also the AI tends to go for other moves if it doesn't see a kill - so if I had Toxapex or Wailord out and anticipated T-Bolt, I would try to catch it and wind up getting one shot or put into red from some other random ass move lol
And although it has 135 Sp ATK as a mega and Thunder is strong, this didn't get sweeps like at all, it hit things for like 30-40% health which was sad, maybe Modest would've helped. Fights are hard deeper into S tier and this felt firmly power crept. Was basically a support mon that got one shot plenty of the time, easily replaceable

This was basically the "press A and win" mon, as I often used this to Dynamax, Fairy max move plus the custom role ability Divine Mandate one shot like 90% of the things I used it on. But it also sets up Misty Terrain which prevents status on both sides and made Holy Water kinda dead lol, so some fights got awkward. Hex naturally synergized with all the status you run and was also quite good. Mystical Fire helped check Steel types and reducing Sp ATK helped simplify some niche spots. Taunt wasn't really used much but wanted a way to deny set up moves throughout the game and didn't feel the need for any other attacking move. I don't imagine many mons being better than Flutter Mane for the Saint Role, feels pretty overpowered most of the time
Galarian Moltres

Long writeup since I love this mon:
One of the more creative strategies I've ever used. With no Speed investment, after one Agility you outspeed the base of basically everything. G-Moltres naturally has 125 Sp Def, so my thought process was if I could boost its Def then I could wall plenty threats. Then I came across Aqua Ring, which is in the first set of moves for the Saint role. Its Z-Move boosts your Def one stage, and its base use is to give you leftovers recovery.
So ideally you switch G-Moltres into a favorable type matchup or special attacker. You Agility, then Roost when necessary, boosting your Sp ATK via the Berserk ability over and over. Z-move Aqua Ring on physical attackers to suddenly wall them off. Synergizes well in a Toxic Spikes strategy since you can outlast plenty things. After 3-4 boosts you can one shot plenty things, also Fiery Wrath's 20% flinch was pretty helpful when it came up.
The weakness was having some status on G-Moltres, getting crit or getting hit hard before you're set up. But otherwise this cleaned up plenty hard fights, felt better than Barraskewda plenty of the time, highly recommended for anybody interested in using the Saint role
