Pokemon.txt help

You can leave the TMs/HMs alone, and simply not give them to the player during the game.

If you still wanted to delete them, all you'd need to do is remove them from items.txt. To change which move a TM/HM teaches, change its details in items.txt and add in a new section in tm.txt for the new move.
 
I only said edit TM's because the game will search for Pokémon you don't have in pokemon.txt, don't remove anything permanantly! Do as Maruno said!
