Mold Breaker also negates Wonder Guard and Levitate, meaning it can hit Bronzong and Shedinja (if it ever shows up).

As for the Adamant Axew thing, you can just have an Adamant Pokemon with Synchronize on your team (Munna, Elgyem) to further increase your chances of getting the Pokemon you want.

A bit late, but I think Jellicent may fare better than Cofagrigus; it has a better defensive typing:
-Scald/Surf
-Will-o-Wisp/Toxic
-Recover
-Taunt/Ice Beam/Shadow Ball
Nature: Bold
EVs: 248 HP/216 Def/44 Spe
Item: Leftovers
