True... I hate contest moves. Only because I don't understand each attack

Yes and a good Cool Contest pikachu moveset will be this:

• Volt Tackle
• Iron Tail
• Quick Attack
• Thunderbolt

Pachirisu with Dawn? Yes. Pikachu with Ash? LOLNO. Ash can stick with gym battles.
