There have been several Water type Ride Pokemon throughout the games.
Lapras is the oldest, starting in XY, and also the one that has appeared the most; appearing in XY, SM/USUM & LGPE.
Sharpedo has made appearances in ORAS and in SM/USUM:
Aside from those, ORAS also allowed you to ride Wailmer and Kyogre. USUM allowed to you travel between islands via Mantine Surf. LGPE let's you ride Starmie and Gyarados and Legends Arceus let's you ride Basculegion.

Lapras and Basculegion are top contenders, but I would love to surf and dive on Kyogre's back again.
I guess Basculegion is the most recent one so if forced to pick I think I'd go with it.

Lapras. In SM/USUM and LGPE at the very least. Might also have used it in XY, but don't recall.
Sharpedo in SM/USUM. Never knew you could ride it in ORAS back when I was playing those games. Same for Wailmer.
Kyogre in ORAS. Discovered it by accident at the time, but it looks really cool if you dive with it!
Basculegion in Legends: Arceus. Necessary to progress =P Riding the waters on it's back was pretty cool though!
Mantine surf was required for the first Island switch as well in USUM iirc.
I did try out Starmie in LGPE, but I was expecting it to be a water Ride Pokemon... but it's a Ride Pokemon for on land... and it kinda weirded me out a bit. Never tried Gyarados.

I never really tried the fancier tricks, but it was an enjoyable minigame imo. I only did each course a handful of times though.

For Paldea Dondozo seems pretty fiting.
Also feel like Gastrodon could fit the role of a water crossing Ride Pokemon quite well.
