Anything that's easy on the eyes and doesn't require you to highlight the text. I personally like color choices and change once in a while (on most forums I go to I change the skin approximately once a month).
 
Anything not too dark and not too bright and goes toghether well is good. Personally I don't really like red or pink layouts.
