Though I didn't have a choice, Pikachu was one of my favorites (Yellow of course). I think it was due to the fact that it followed you around and you could see it's expressions and so forth.

Otherwise:
1st Gen: Bulbasaur
2nd Gen: Chikorita
3rd Gen: Torn between Treecko and Mudkip

And I only really like them at the basic stage.
