did they go home to their respective towns?
or do they stay at gray's house as an Elite Maid Cleaning Squad?

She's not supposed to be anyone in particular (although she's closest in design to a Lass). The reason why she's in the opening is because during the Japanese credits, that image coincides with these lyrics:

For example, in fire, in water, in grass, in forests
In earth, in clouds, in that girl's skirt

(Note that shortly before then, Pikachu's running past Charizard, Venusaur, and Blastoise, all of whom are nods to the first line.)

So, long story short, random girl just there for the lyric lulz. Oh, Japan.

I think it was a Lass design, myself. Maybe they were going to use it, yet never did. Silly producers.

No, it was actually supposed to be the girl character in the original Pokemon Green.I read that somewhere on a web site it said GameFreak was going to add a girl character to R/G/B but did'nt because of game space Limitations.Maybe they thought they could add her in the show Thats what i think
 
No. That girl is not Blue. What you said was true though. Nintendo originally planned to incorporate the feature of choosing to be a boy or girl in RBY, but later did not implement the idea due to limitations.

I read in a documentary that the girl in the opening is the generic Lass trainer in RBY.
 
I agree with the random lass theory. makes sense as they sorta do look similar

Doesn't the translation say something like "up that girls skirt?" In the Japanese version? Pikachu does run under her.
But, on topic. It be a random lass. (in my opinion)
