I recently got pokecrystal and I did some simple edits in the starters (Typing and stuff) and saved it. However, when I opened the pokecrystal11.gbc file, there was no change. What am I doing wrong?

Well did you "make" the new .gbc file after you committed your changes?

You need to compile your changes bro

First and foremost, as most will say, I recommend you read some decomp/diassembly tutorials before really diving into this.

Secondly, changing the data files alone wont really do anything to the .gbc file you already have. You need to use the git commands 'add' and 'commit' to effectively "save" your changes and then you need to use the command 'make' to remake the .gbc files with your new changes included.
