Firstly the only time there is a horse an we know it's Epon is OoT and MM, I think FSA/HA...I can't remember. In OS/OoS/OoA...the horse's name is never stated, so you cannot say it's Epona.
The same applies with the new game. We do not know this horse's name, where this game comes into play, which Link if it's an old one is used, etc. All we know is that it's a horse. So, don't call it Epona.
Were we not riding around destroying "those creatures from Ganon" with our Bow while feeding Epona carrots? Albeit, it seems that a heck of a lot more action is taking place while on horseback this time around, however...I see no reason why the carrots should be taken away. The carrots worked for speed, did they not? Why would you always want the horse running at the same speed? Yes, you can change it with the Control Stick, but when titled the entire way you could still get some boost via carrots. So...I think you they should keep the carrots, it could come in handy when trying to outrun a riding herd of Bokoblins.
