Actually it depends, sometime it's for pronounciation, for example we don't pronounce "e", "é" and "è" the same way. Or to differentiate two homophones when writing them, for example the world "ou" that means "or" and the word "où" that means "where" are pronounciated exactly the same way but written differently ^^
