When it comes to linking video games to Norse mythology, I always think of the Dept. Heaven series. The main character in Riviera has a weapon named Einherjar or something like that and they talk about Asgard and Utgard and Ragnarok and...yeah.

Ratatosk is the guardian of the tree of Yggdrasil in Norse Mythology.

Other than Symphonia I haven't really played anything with Norse Mythology. There's Yggdrasil in Digimon, but yeah.

Other than Symphonia and Dept. Heaven I can think of Etrian Odyssey (the first black F.O.E. is "Fenrir"), Final Fantasy IX (Fenrir is Eiko's first summon iirc), Valkyrie Profile... Those are the only ones I can think of at the moment XD;
