Besides ROM hacks, have you tried fan games ? There are some great ones I could suggest to you!

I have not. I'm going to start diving into more games. My son is at an age now where he likes games he can explore and build on. I figured now is the best time to play multiple games and see what would be a good fit for him. I'm all ears for suggestions! Thanks!

I can suggest Solar Light - Lunar Dark, Zeta / Omicron! Also Insurgence (but not for children as some parts are less family friendly), and Reborn and Desolation (these last two for mature eyes only). Insurgence is my personal favourite! Reborn also has hairpulling puzzles and, like, Desolation, top level battles if you are into challenge!
