    I keep hearing about Hyper Training (I haven't finished gen 7 yet), and my question is this; does Hyper Training eliminate the need breed a 6IV Pok?mon? In other words, can I make any Pok?mon 6IV through HT?

    You can make any Pokemon basically 6IV via Hyper Training, but you can't completely substitute breeding with Hyper Training unfortunately. Bottle Caps aren't super easy to obtain, and you have to get the Pokemon to level 100 in order to hyper train....and level grinding in Sun/Moon kinda sucks.

    Correct me if ive heard wrong but I also read that hyper training doesnt actually change the IV's of a pokemon just the stats. So you make a pokemon 6IV equivalent and try and breed it it wont be classed as 6IV.

    Yeah, that's correct.

    I assume they did it that way to preserve Hidden Power types and characteristics.
     
    To me it makes it useful for competitive Legendaries and other gift pokemon, for breeding its only real benefit is shinies if you get a dodgy IV you can now correct it (as I will be doing with my Shiny Greninja with a duff defence IV when bank arrives).
     
    That's right. As mentioned, it's best to use Hyper Training for:
    - Legendary Pokémon (including those you transfer from Bank) and Ultra Beasts
    - Shinies
    - Pokémon you plan to use Hidden Power with
    - Anything that you might get in Gen IV with Defog

    I'm probably missing something in there. It's notable because one of the most common things that fits two of those criteria is Tapu Lele with Hidden Power Fire. I actually caught myself one of those (thank god for that Master Ball), traded it to my main game and got it to Level 100 thanks to a round of Elite Four grinding, the Lucky Egg, Refresh boosted EXP, and Festival Plaza. I also had a Beldum I caught myself that had a crappy Defense IV but got to become a Metagross at Level 100 and got that stat maxed out.
