(The third starter that was never picked from the starters that would be weak to yours and strong against your rival's)
Maybe the Ratatta she caught in the beginning of the game as a Raticate?

Those are the only two I would really expect from her from what I know.

I'm inclined to agree with the above post, although any other possibilities could have been any baby Pokemon/evolutions of those, seeing she was related to the Daycare Couple - maybe she'd get another egg from them later on.
