Um, fairly easily, actually. Go find a cookbook. Now read every single line of it and check for typos. Not so easy, huh? That's basically what someone had to do and it looks like they slipped up. :P Honestly, though it's their fault, I can't really blame 'em, haha.
Well yeah, but it's not like they just had 1-3 editors(did they?), for the exact reason that it's so huge.

Actually, yes, most books only have one editor, rarely more. It's even more problematic as "people" would not pop up in a spell check because it is spelled correctly and you can't run a grammar check in a cookbook's ingredient list for obvious reasons.

I'm sure that typo was located near the middle of the book, so an editor or five even, tired of reading the identical phrase including "pepper" hundreds of times would easily be tricked into reading and believing it says "pepper" and not "people", because they've read it so often that way that it's become drilled and reflexive in their minds.

Even five editors might miss that because of this.
