How's this Weavile moveset?

I trained it in Speed and Attack and a little HP.

Ice Punch (best physical ice move)
Focus Punch (to catch pokes switching in)
Brick Break (another fighting move but it plays a different role than focus punch)
Night Slash

I don't think you should have focus punch and brick break, even if they have different role. Focus punch won't be really useful if you don't have substitue, you'll need A LOT of prediction if you want to use it when they switch. I think swords dance would work better and, if you can predict the switch to focus punch, you can do the same with SD and then boost all your attacks. Brick break with SD would be the same as focus punch.
 
Ok, I got a lead which I need some moves to..

Jirachi
And not with scarf. With Leftovers

I know I'm going to have
-Stealth Rocks
-Iron Head (Maybe)
-??
-??

So what is smart to have on a lead like Jirachi?
U-turn?
T-wave?
Grass knot?
Elemental punches?
For a lead Jirachi I'd recommend adding Def and HP ev's.
240 HP with higher than 29 IV's, to get 400 Hp
224 Def with 31 IV's
44 Spe with 31 IV's

It should be able to take a few hits. Now onward to the moves..
Stealth Rocks and Iron Head are fine.
Maybe add Wish, it could be helpful.
For the last move.. A physical attack would be good. U-turn for example.
Also this Jirachi must be Impish nature'd. Because it is a physical attacker. =/
 
How's this Slaking move set?

Trained in HP, attack, and defense.

Bulk Up
Brick Break
Slack Off
Earthquake

Terrible.

Slaking cant use stat up or support moves due to its ability which makes it set up fodder. No Stab is also garbage.

Slaking@Choice Band/Choice Scarf
252 Att / 252 Speed / 6 hp
Adamant Nature
- Return
- Fire Punch
- Earthquake
- Sucker Punch (only with CB) / Pursuit / Shadow Claw

Get in, hurt something, get out. Basically all this thing can do.

expert belt
trained in att spd and hp
dragon dance/fire blast
outrage/waterfall

im thinkin of switchin to this move set

leftovers
dragon dance/arial ace
thunderbolt/earthquake

id also try to switch evs to 252att/180spd/76SPatt

should this be done??

No.

Keep the previous moveset. just change waterfall to earthquake. you might wanna run fire punch over fire blast if you don't like the accuracy issue, they're going to be hitting for about the same strength anyways

Depends on what roll he is going to be filling.

You usually don't want to run a +speed nature due to Toxicroak's priority moves. Fake Out and X-Scissor are also not recommended and can be replaced with moves that have more utility.

These are the two most basic sets:

Toxicroak @ Life Orb
Adamant
252 ATK/4 SPD/252 SPE
- Cross Chop
- Stone Edge
- Sucker Punch
- Swords Dance

Toxicroak @ Choice Band
Adamant
252 ATK/4 SPD/252 SPE
- Cross Chop
- Ice Punch/Stone Edge
- Poison Jab/Gunk Shot
- Sucker Punch
 
Should a Mantine have a bold nature with some Def EV's or his it useless?
I guess it would be decent, but Calm @ 252 HP / 240 Def / 16 SpA is preferred for a mixed wall. You could use 252 HP / 156 Def / 16 SpA / 84 SpD, which would give the same Defense stat amount, it just has 10 lower SpD than the aforementioned spread.

On Snorlax, is Pursuit able to be legally obtained with Curse? I've seen multiple sources, and some say it is, some say it isn't.

Using Rest will recover all of its HP after using Curse

You have to use a move tutor in Pokemon Coliseum to teach Snorlax Selfdestruct
