It means the Pokemon originally came from a Gen VI game and didn't go through Pokemon Bank.

Not really, and they're not bypassing the shiny lock exactly, in the pokemon data there is a switch that determines whether a pokemon is shiny or not. They caught a normal zapdos which would always have the switch set to "no" and they just simply changed it to "yes", that's all.
